Oatmeal is a breakfast staple in our home.  It's cheap, easy and can be made in so many different ways.  One of our favorite ways to eat it is with apples cooked into it.  Think "apple pie" for breakfast, but WAY less complicated!  My girls love it so much more than the standard oatmeal with maple syrup and vanilla, they generally have seconds - that's a pretty big deal around our house.   

1 TB Unsalted Butter (or coconut oil)
1 TB Honey
1 Apple, cored and diced
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 teaspoon sea salt
1 1/2 C Rolled Oats (we use Bob's GF)
3 Apples, Juiced (or 1 1/2 C Apple Juice)
  • Combine the butter (or oil) and honey in a heavy saucepan over medium heat and cook for 2 minutes, stirring frequently, until melted and blended.  Add the diced apple, cinnamon, nutmeg and salt and cook for about 4 minutes, stirring, until the apples release their juices.  Add the oats and cook for about 2 more minutes, until the juices are absorbed, stirring to prevent sticking.  Add the apple juice and 1 1/2 cups water and bring to a boil.  Reduce the heat to a simmer, cover and cook for 7-10 minutes, until the oatmeal is thick and the apples are soft.
  • Let the cooked oatmeal rest, covered, for 2 minutes.  Serve hot with any combination of toasted nuts, fresh fruit or dried fruit, cream or extra cinnamon.
We top it with butter, blueberries, sliced almonds, cinnamon and milk.
