This morning was New Years Day and we woke up to a beautiful clear sunshiny day.  We decided to take full advantage of the day and head up to the mountain for snowboarding with the littles.  There was one problem, we are on a restricted diet and we had nothing to bring to snack on.  The girls and I decided to whip up a batch of these delicious and  nutritious granola bites!


1/2 C unsalted butter (we've also substituted coconut oil)
1/3 C raw honey
1/4 C real maple syrup
2 C rolled oats
2 TB Artisan Gluten Free Flour
3/4 C slivered almonds
1/2 C shredded coconut
1/3 C chopped dates
1/4 tsp salt


  1. Preheat oven to 325 degrees F
  2. In a small saucepan combine butter, honey and maple syrup.  Turn the heat on medium-low and melt down ingredients. 
  3. Meanwhile in a large mixing bowl combine the remaining ingredients.  Mix. 
  4. Add in the melted down butter, honey and maple syrup.  Mix until well combined.  
  5. Transfer the ingredients to paper-lined mini muffin tin.
  6. Bake for 22 minutes.  Cool.  Ready to eat!
